Information on farming corn:

Growth

Corn is much more sensitive than most farmable plants; it is more affected by temperature change, water amount, and soil quality. It is recommended you use fertilizer to farm it, as otherwise you'll be capped at 67% plant health.
Corn has a much higher variance in how quickly it ages than most other plants, especially once it reaches the fruiting stage. Keep a close eye on your corn once it reaches the fruiting stage, as it may age quickly, causing you to miss the harvest. Even with good genetics, not all corn will give a great harvest.
Corn varies wildly in how much it yields, though corn with plenty of Y genes still has a higher than average output.

Usage

While corn has less calories, hydration and healing than potatoes or pumpkins, they're great for fertilizer, and are excellent for keeping your farm running smoothly. You can also sell them at the bandit village.
Horses regain lots of stamina when consuming corn, making it a great crop for horse owners.

Tips

Stack up H genes to help counteract the natural frailty of corn; Y genes aren't as useful here as they are as in other plants.
If you don't have a horse to provide you with plenty of plant food via manure, it might be a good idea to grow something else first, then use the fertilizer from your first harvest to fuel your corn crops. Although corn is excellent fertilizer, it needs fertilizer to grow properly.

Horses fed from a trough with multiple food sources will often prefer corn over all other types. Corn quickly restores horse stamina.
