Butcher knives will only be seen on modded servers, not vanilla (except for during events such as Halloween). That's why you may have missed out on it so far.

Here we are! While not seen in Vanilla outside of Halloween, these are fairly common and easy to come by in most Modded servers. Finding one of these early on makes early game hunting and melee combat much easier as this gathers and attacks just as fast as the Combat Knife.
